Remember the commercial

that began with, “How many licks does it take to get to the center of a Tootsie Roll Pop?”

Well, as I pack for RWA’s National Conference in Orlando, I couldn’t help but think about the commercial as I packed…SHOES. Clown As in, “How many pairs of SHOES does Kay need to get through conference?”

The answer?

Well, I think I’ll leave that up to you. As in let’s hold a special contest and see who comes up with the right answer. If more than one person answers correctly, I’ll put the names in a hat and draw a winner from there. THe winner will get a very special treat from the conference. So, you game???

Pre-conference Madness

The pre-conference madness has begun. I thought I had a few more days before I had to really kick into gear but things keep coming up. I need books for this event, postcards for that one. A certain outfit for another. Ack! :chair: LOL Writers are such introverts. Myself included. All the fuss makes me long for a beach chair. :sunny: I love going to the Romance Writers of America’s National Conference. It’s a blast–but exhausting. Keeping track of it all drives me a bit batty. :bat:

My CP Serena Miller has a book getting ready to officially hit the shelves August 1. It’s an Amish romance in the Finding Love series titled SUGARCREEK OHIO. I’ll see if I can’t rustle up a cover for you and post it as well. Anyway, great read. And an absolutely fabulous person. Serena is one of a kind so I hope you’ll check it out.

The 80s

I grew up in the 80s (and 90s), the decade of big hair and great bands and fun music.

The other day while dd and I were cooking, we blasted the 80s channel on the TV and danced to non-stop favorites from my, um, younger years. Silly Heh. Anyway, between Journey’s DON’T STOP BELIEVING, Rick Springfield’s JESSIE’S GIRL and lots of other favorites, we had a blast.

Low-carb Peanut Butter Pie

As some of you know I’ve recently discovered I’m carb sensitive, which basically means every piece of bread or pasta or dessert I put in my mouth might as well be glued to my stomach and hips. No one wants that! Cry

So as I jump into low-carb living with both feet because I don’t really have an alternative, I’ve purchased some cookbooks and looked online for some wonderful recipes. This one is divine for those of us who has to watch our desserts. It’s low carb, low sugar and OMG good. Best of all if you double the portions, you’ve got a great dessert to take with you to church or family gatherings. Stick a little sign on it that it’s diabetic friendly and you’re guaranteed to be a hit! Warning: it’s *very* rich so a little goes a long way when cutting those portions.

Peanut Butter Pie:::

Crust:
1 cup dry roasted peanuts, chopped fine
1/4 cup Splenda
3 tablespoons melted butter

Mix and pat in pie pan, bake at 375 for 13 minutes. Cool.

Filling:

1 8oz. cream cheese
1 cup Splenda
1 cup peanut butter (I used peanut butter sweetened with agave instead of sweetener and it tasted great!)
1 8 oz. carton of cool whip

Mix on high speed by mixer. Pour into crust. Top with whipped cream if desired.
